My wife and I cycled the Waihaha trail to Waihora Bay in February several years ago. We camped there overnight and returned via the same trail back to the car park. It's a lovely place, right on the beach, with a long drop toilet, shelter and secluded bay. Gear wise, just bring a sleeping bag, mosquito net (in summer)/ fly (if rain is forecast), sleeping mat, cooker and fuel, food, bike tools, water purification system. We fitted this all into our 40 litre day packs.
